Brioche French Toast with a Roasted Rhubarb and Blood Orange Compote

INGREDIENTS

4 slices Promise Gluten Free Brioche loaf
2 eggs
Splash of milk
1 teaspoon of butter
2 sticks of Rhubarb
Blood Oranges
2 tblsp sugar

STEPS
STEP 1

Slice rhubarb and segment orange.

STEP 2

Then poach gently in sugar with a splash of water till just cooked.

STEP 3

Beat eggs and milk in a shallow dish and then soak slices of brioche in this in turn.

STEP 4

Fry the brioche in a hot frying pan with a little butter till golden on both sides.

STEP 5

Serve with the compote.

STEP 6

Relax and enjoy.
