Roast Veg Sandwich

INGREDIENTS

4 x slices Promise Gluten Free Soft White Bread.
1/2 x Aubergine, in slices
1 x large Carrots sliced lengthways
1 x large Courgette, sliced lengthways
1 x tub of your favourite hummus
Handful of baby leaf

STEPS
STEP 1

Place the vegetables in a large baking tray,

STEP 2

Keeping everything separate,

STEP 3

Then drizzle over a good lug of olive oil and season well with salt and pepper.

STEP 4

Roast all the veg in a hot oven 190c or 374f for about 20 to 30 minutes,

STEP 5

Turning them halfway until everything is golden and delicious.

STEP 6

Allow to cool

STEP 7

Make up sandwichs with hummus, veg and baby leaf.
