Delicious Open Mackerel and Avocado Sandwich

INGREDIENTS

2 slices of Promise Gluten Free Multigrain Bread
3 tblsp Mayo
Small handful of watercress
1 x Avocado, cut into wedges
2 x smoked mackerel fillets, in chunks
1 tsp dijon mustard
½ lemon
2 tblsp greek yoghurt

STEPS
STEP 1

Make dressing by whisking together dijon mustard, greek yoghurt and lemon juice.

STEP 2

Make sandwich by first spreading each slice with some mayo,

STEP 3

Then layer on some sliced avocado, watercress and chunks of mackerel

STEP 4

Drizzle over the dressing.
