Vibrant Veg Pizza Rolls

INGREDIENTS

2 Promise Gluten Free Rolls
1 tablespoon of pizza sauce
1 handful of cubed mozarella
1 handful of cherry tomatoes quartered.
1 tablespoon sweet Corn
1 tablespoon green pepper, diced
1 tablespoon red Onion
1 x sweet potato, cubed

STEPS
STEP 1

Place the sweet potato cubes in a baking tray,

STEP 2

Drizzle over a good lug of olive oil and season well with salt and pepper. Roast in a hot oven 190c/374f for about 20 to 30 minutes,

STEP 3

Stirring them halfway until everything is golden.

STEP 4

Cut the rolls lengthways,

STEP 5

Top with pizza sauce, the veg and cubes of mozzarella.

STEP 6

Bake in the oven for 15 minutes or until the cheese is bubbling.
